Letter Writing

What kind of Letter should I write?

I am a little confuse on what kind of letter is more applicable and appropriate.

The situation is, there's this company who owes us a certain outstanding balance and it has been long due (although we haven't mentioned to them a due date but months have passed and they haven't sent us their payment). But what concerned me was, their employee suggested that we write them an Acknowledgment Letter. And base from my research, acknowledgement letters are basically a form of a "thank you" letter, something like that, but I'm not totally sure.

On the other hand, I was thinking of writing a Request Payment Letter, which I think is more suitable.

Yet either way, should I just write two kinds of letter--the Acknowledgement and Request Payment (letter)?

And for that, can anybody share their ideas on how I can write these two kinds of letter. Maybe a template? Or what's the best way to write an Acknowledgement Letter, as well as a Request Payment Letter? Should it be just short?
