I don't think that's correct. "Hum" describes the sound of "hm," but not the function in conversation that the OP is asking about. I believe there's a term for that, but I can't think of it at the moment. Someone will come up with it.

I tried to find out a bit more about this, and came across the terms "filler words" and "verbalized pauses."

Maybe a filler, if it is part of a longer utterance..

But if the listener just throws in 'hm' while another person is speaking, I'd think about calling it an interjection.

Hm. I'm not sure that "hm" is for this purpose. I would say "hm" is more for mild surprise or disagreement, while "mm" is more for acknowledgement or agreement.
