Just to be clear, the punctuation mark you are asking about (or seem to be asking about) is called a dash. A hyphen has a completely different purpose.

(For what it's worth, I'm happy with dashes -- in moderation, and when used correctly -- at all levels of formality.)

Dashes are an acceptable form of creative writing and it does not mean you are not able to put your thoughts down on paper so you use the dashes. There is an en-dash and an em-dash and when used correctly - they assist the reader in following your thought process as you convey it in writing.
