We are free to make any word we like using affixes ( as long as it makes sense). Not even the most comprehensive dictionary bothers to list all the possible words in "un-" or "non-". I don't think I'd ever read "un-nest" before, but in the context the meaning was obvious, and that makes it a legitimate word.
