please find below setence
everyone else at testimony meeting seemed to be able to testify that the BOM was true- I turned myself in knots trying to believe in the mormon church.

In my opinion:

It means you may have agonized with the information, perhaps not agreeing with everything you were told. Perhaps you were also being brainwashed and fought that as well. It means a true struggle, usually mentally.

I turned myself in knots trying to believe in the mormon church.

The correct and standard expression is 'I tied myself (up) in knots'.

( You also need a capital 'M' in Mormon. )
