What is the difference between this and this one?

What is the difference between this and this one?
or
that and that one ?
or
other and other one?

Someone can explain me why and whe I have to use "one"?

This ( demonstrative adjective ) book belongs to me; that one ( demonstrative pronoun ) belongs to John. The concept applies to this, that, other . Some people include these, those and use ones for the pronoun.

This (demonstrative adjective) book belongs to me; that one (demonstrative pronoun) belongs to John. The concept applies to this, that, other. Some people include these, those and use ones for the pronoun. I don't like the sound of "these books and those ones" for the simple reason that one cannot be pluralized (my opinion only).
