What does' your health' mean in the following context?

When I climbed out of the canal to put the second snake in my basket I saw, to my surprise, that a man was watching me. He was short and thick-bodied, with short hair, blue eyes, a nose like a bird's beak and a wide smiling mouth. I did not recognize hem.
' Your health' he said in a rich deep voice.
'Thank you, and the same to you!' I replied politely.
