It's some sort of poker game where one player has bet a "Poland" and another player has raised the bet by an "Ireland."

No. The language used in poker is very idiomatic.
I'll see your (whatever the current bet is) = I'll match your bet.
It has nothing to do with exposing what cards are in your hand.
