What does this sentence actually mean?

It is almost as valueless as food, one kernel of corn is more nutritious than a whole ear of teosinte.

It does rather depend on what has gone before, but I suspect it will make sense if you delete the first 'as'. You need a semi-colon or full stop after 'food'.
