What does it mean?

Hi,

Just as animals are used as models to study the heart or lungs of human beings, so they are used as models to gain insight into the human brain and nervous system.

Is the sentence above grammatically correct and meaningful? I don't understand the underlined parts. What do they mean? I want to restate the sentence using other functional words. So I need help.
