What do we say?

What do we say, when fruits are raw. Can we say these apples are not well cooked or what? I am looking for the word. Please help.

If you are cooking apples for some reason, and they are not cooked enough, then you can say "The apples are undercooked."

"Raw" means "uncooked." You seem to be looking for "unripe," or "under-ripe." Unripe bananas are green, and you can't eat them. Ripe bananas are yellow. Over-ripe bananas are brown and squishy. All of them are raw, unless you cook them.
