What do we call the letter "e" with a small slanted stick on it as in both the Es in "protege" or in the 1st E in "memoire"? I know it's pronounced as "AA" and not "EE" as we do in english. Also what do we call that little stick on it?

é is, indeed, called an e with an acute accent. It is in the French alphabet, pronounced as in English day, but not as lengthy, and without diphthong. Many words in English keep the French diacritical marks in some words: résumé, protégé, financé, déjà vu.
