What different between 2 sentences ?

1. I saw that man take you bike.

2. I saw that man taking you bike.

What different between 2 sentences ?
and if wrong, can you help me to fix it, please

There is barely any difference between both sets of your sentences- a verb without '-ing' and a verb with '-ing' in the past tense are pretty much just two different ways of saying the same thing. A grammar correction though- since the bike belongs to this 'you', you should say 'your bike'. Then it shows that the bike belongs to the other person.
