What are the differences between 25-year-olds and twentyfive-year old

Hi all,
I can't find the difference of the group of words '25-year-olds', 'twentyfive-year old' and 25 year olds. I know that if you use hyphen between words, you don't need to use an s at the end of the last word. I would really appreciate if you guyz help me out.
Thanks in advance,
Tonny

In addition to Grammar Geek's response...

If you're talking about only one person: He is 25 years old = He's a 25-year-old man

My son is 5 years old / My 5-year-old son...
