I've been watching Doc Martin....the folks say 'wha?" rather than 'what?' why is that? thx

I hadn't noticed, but they do try to approximate a Cornish accent in that series. That accent is far enough from a standard English accent that they decided not to use the full Cornish accent. Too many viewers would fail to understand some of the dialog.
