Were versus Was

Many years ago in English class, I learned that if a person were talking about a dream or if the person used the word "if", than the verb would be plural and not singular, i.e.

I wish I were a dancer.

I dreamed I were a carpenter.

Is this the proper way to use the verb "were"?

You are only partially correct. After wish, were is correct as you wrote it, but not after dreamed. The second example should be

I dreamed I was a carpenter.
Or
I dreamt I was a carpenter.
