We're Christian/Christians?

Hi there, just wondering which one is correct?

Is the word serving as a noun or adjective here? If Christians is correct, why we say we are Canadian not Canadians?

Without the s , consider it an adjective. With, a proper noun. I see no difference between Christian and Canadian in this respect.
