If food is not fresh and not eatable.
Would you say:
It went bad. or It's gone bad.
Similarly,
It went stale. or It's gone stale.

If you have just discovered its bad state, then use "it's gone."

You open up the refrigerator and open the milk and sniff it. "Oh wow. The milk's gone bad." The next day, your roommate says "Hey, what happened to the milk" and you say "It went bad. I poured it down the drain."

For stale, I just use are/were (is/was).

Oh, these are stale.
