I can understand this sentence, but What does "one" do here?

Kalimera Athena, I think it refers to 'step' : "You went one [step] too far". There's also a similar expression with time, which you probably know about : "This is one time too many". I'm mentioning it 'coz it's only been few months since I learned it .
