I agree, "the way we play chess" sounds more natural, or perhaps "the manner in which we play chess" if you want to sound more formal; but "method" sounds like a specific series of predetermined steps. It's not wrong it just sounds more like a scripted procedure rather than the means, manner, way, or technique you are probably wanting to convey. Method does mean those things too, but in the conte

To a chess player, they are quite different. The way we play chess can mean anything...from the style of chess pieces to whether or not touch and move is required. A chess method is a master's recommended way of approaching the game..a formalized structure of tactics, strategy and chess philosophy.
