Was/Were

For example: "If Harry was asked if he was home last night, he would have said yes" or should it be "If Harry were asked if he was home last night, he would have said yes"

Either verb can be used. Were is more formal than was: If Harry was/were asked if he was home last night, he would say yes. If Harry had been asked if he was home last night, he would have said yes.
