was being killed, being killed, was killed

1) I saw Turkey was being killed at nine o'clock.

2) I saw Turkey being killed at nine o'clock.

3) I saw Turkey was killed at nine o'clock.

I assume the second one is correct. If so, why are the first and third ones incorrect? Please give as much elaboration as possible.
