I've never stated that 'finished' is an adjective.

It's a 100% participle to me, though many would classify it as an adjective, but that doesn't change a thing in terms of thefunction.
The "to be" part in a passive construction helps to link a subject with either an adjective or a participle which functions as an adjective.
'The job was finished' or 'The job was easy' doesn't change a thing functionwise.
