1. I'm easily waken [up] (in the middle of night because of some sound)
2. I easily wake [up] (in the middle of night because of some sound).

Q) Can I say #1 and #2?
Q2) Are 'up's in big brackets[] necessary?

While I think that you can say both (I would put "the" before "night) I personally think that this idea is best expressed as I'm a light sleeper.

Only the second sentence is correct. The first uses the present form of the word waken in the passive voice, rather than the past participle. Either of the following sentences are correct:

I'm easily wakened. The particle up is wrong here.
