People living on these Indonesian islands experience a lot of volcanic activity/activities.

Do both activity and activities fit in the above? If yes, do they make a difference in meaning? Thanks.

But why isn't it the plural activities since it's "a lot of volcanic activities?"

We don't call them 'activities'-- we call them 'eruptions' or 'smoke plumes' or whatever. Activity is the general, well, activity going on in the area. The countable noun is inappropriate here.
