(he is describing a recipe, part I can not figure out is " we’ll do a little pooling right."=?

Without spending too much time, the only Google ref. I found for something the cook would do, is "pooling of eggs." This is breaking a large number of eggs into a bucket and saving them for later use. Doesn't seem to apply.

There are also many references to "moisture pooling" on top of a piece of cooking meat, but this is not something the coo

Sounds like combining liquids together and possibly adding other things. My guess is, that as in the case of the pooled eggs, any mixing is of the non-violent variety.
