In the above sentence, I wonder if the word 'adaptable' instead of 'adjustable' is correct. Are these two words interchangeable?

  1. When was the last time you actually wrote something by hand except just [to jot / jotting /jot] down notes?

In the above sentence, I know the word ‘to jot’ is correct. I wonder if these words ‘jotting’ and ‘jot’ is grammatically correct.
