Vocab question no. 48: people, peoples, minorities

Hello there,

My understanding of the word peoples is as follows: it's a group of different kind of minorities, tribes or ethnic groups that live in this or that country and do not constitute a country's majority. Am I correct?

I'm wondering if it's correct to say:

1) peoples of China...
2) people from minority...
3) minority peoples
4) French peoples
5) Han peoples
