I don't understand what he's saying at 2 seconds into the video. I think I hear the words lamb and Aussie gum (??) but I'm not really sure.

Yipes! I'm not sure either. "Where's the lamb-mad (?) Aussie gone?" 'Lamb-mad' makes no sense, but maybe it fits into the earlier context?
