1. I'm very sorry that I can't join you.

Which one is used correctly, "very, so or really" in the sentence? Thanks as usual.

Do you mean "so....that" clause? In this case, "so" put an emphasis on the following adjective making it more intense, and the part after "that" says the effect/result of it.
for example, The cake tasted so good that I ate it all.
"very" CANNOT be used in place of "so". You asked why but I don't know. It is just grammar rule, like subject before verb.
