Verb issues

Statistics hasn't been revised as a course approach (why is not "approaches" here?) far too long.

I can't remember what it is (can I omit "is" here? and why? )called in English.

Mary "I love chocolate."
Jill: "Mary said (that) she loved chocolate." <-- can I also put "loves" here since loving choclate is a person's characteristic, not just a short time state? Why?

Mary: "I went skiing."
Jill: "Mary said (that) she had gone skiing." <-- Can I also put " went" here? Why?

I'd have to say cause it's a different verb but the meaning stays the same? not so sure.
