Verb forms

I came across some sentences, such as:

But to love her, I just need her everywhere

To please him is easy

Love a person is so hard

Running makes me exhausted

Living is easy with eyes closed

Why "to live is to fight" but not "living is to fight"

So, when to use to infi/ gerund or bare?

Hi, it'd difficult to say. Both could be used in most contexts, but one is usually more common than the other in certain cases. At the beginning of a sentence the ing-form is much more common.

Studying English is hard. To sutdy English is hard.

In other structures the to-form is the usual one.

Hi Belly

I agree with what Kooyeen has written. I would add that it saying "To live is to fight" is simply better balanced. In that sentence (with the verb be), you basically indicate that the parts of the sentence on either side of the verb are equal or the same, so it is better to keep the form the same as well.
