Verb agreement with 'all'

Rhythm is the pattern of stresses within a line of verse. All spoken word has a rhythm formed by stressed and unstressed syllables.

I couldn't see the use of singular verbs 'word' and 'has' with the subject 'all'. I know it's correct but why?

It isn't correct. It would be correct with an uncountable noun, e.g. "all spoken verse has ...".
