I recently watched a video clip about a personal trainer who wants to gain weight on purpose to show people how to slim down and become fit.

There are some parts of the video clip that I don't quite understand. I hope someone could clarify this.

"Most of us, probably wish, no, I definitely wish, let ourselves go, eat whatever we want for a while, not worry about a thing. Well, we found a man who is doing just that."

This is the introuductory part where the anchor made an opening statement of the story.

Q1) Why is the subject "we" missing?

ex) Most of us wish we let ourselves go, eat whatever we want for a while...

Q2) Why was the present tense used instead of the past tense? Shouldn't the verb after "wish" be one tense back?

ex) We wish we ate whatever we wanted for a while...

"Watching and supporting him along the way, his wife of six and a half years, Lynn."

Q3) This part seems a little weird, too. There is no verb in the main clause. How should I go about understanding this?

I would appreciate your help.
