Vaporize or evaporate

Hello. I' m a bit confused with the use of the words evaporate and vaporize as I don't see their difference in meaning. Can you tell me if I have used them correctly in the following examples? Could they be used interchangeably?

We waited for the mist to vaporize.

The seawater evaporated leaving salt behind.
