It can also simply mean a favorable position, but either definition I think works in the context of chess.

Because a knight can hop around (over other pieces and does not need to move square by square) it can have a broader/wider perspective. The idea of a view/perspective is not that the knight itself sees anything (an inanimate object as you point out), but that the player can foresee
