Things (as in 3 and 4) may be referenced by either 'that' or 'which'. 'that' is regarded as less formal than 'w

We normally speak of 'people' rather than 'persons'
Both pairs show no semantic differences, and no syntactic differences other than what follows from "that" not being a pronoun.
Incidentally, I would echo what fivejedjon said: "people" is more natural than "persons" when talking of friends or relatives.
