Using percentage in letter writing
If I had to begin a sentence with "one hundred percent" would I write it out or write it "100%"

In formal writing it is not good practice to begin or end a sentence with numerical figures. Start with 'One hundred percent... ' or reorder the sentence so that the number comes in its interior:
'One hundred and twenty protesters were arrested by the police.'
'The police arrested 120 protesters.'
'One hundred and twenty protesters were arrested by the police.'
'The police arrested 120 protesters.'
