Using 'it' or 'they' to reference hair

Hi which one of the following is correct?

  1. I have red hair. It is long.
  2. I have red hair. They are long.

'They' is wrong when talking about a head of hair:

She has nice hair: it is long and silky.

There're three hairs in my soup; they are long and repulsive.
