"study" here means "the process of learning histrory" and "the" is there because we mean "the scientific and globally accepted study of history as taught (and learned) in schools, universities and other institutions dealing with this topic.
This usage is mainly reserved for well known fields of science such as history, geology, philosophy, sociology etc.
