In USA, which would you say?
The restaurant uses this company/goes through this company for....

You could say it either way:

I see it a little differently.

Company A uses Company B This refers to only two companies..

Company A goes through Company B. To me, this suggests that company B deals with some entity (eg Company C) on behalf of Company A.
