Use of "Unchallenged"

Does unchallenged only refer to a topic / idea which is not discussed or can it also be used as an adjective to describe a person whose occupation is too simple for them? If the latter use is false, is there any adjective with such a meaning?

I think your suggested use is possible, albeit not particularly common:

"He felt unchallenged by his work."

I think it would be more usual to say "He did not find his work challenging".

Another word you could consider is "unstretched".

Unstretched also seems slightly awkward, though, don't you think? Any more alternatives?

You might also say that a person is under-employed or under-challenged in his/her position.
