Use of "which" and "that"

My granddaughter and I were discussing the use of "which" and "that" in grammatically correct sentences. She is teaching a course and drew a complete blank as to the rule. Is there a specific rule which deals with this?

Dear Adrienne, Well, if you are talking about the use of 'which' and 'that' in relative clauses, some books say that you must only use 'that' to express a restrictive meaning, but others say that 'which' is acceptable too. Ryan
