Use of personal pronoun they/them

Could you tell me which of the following sentences is correct and why they are correct?

1. None so blind as they that will not see.
None so blind as them that will not see.

2. It isn't for such as they to dictate to us.
It isn't for such as them to dictate to us.

The more usual version of this expression is 'There's none so blind as those who will not see'. 1. I'd say 'None so blind as them who will not see'.

In both cases, an argument may be made for the use of 'they'.
