I have seen various answers on this subject, but none that seems to answer for this structure specifically:
I would like to hear what Mom and Dad and everyone are doing. Or I would like to hear what Mom and Dad and everyone is doing.
I tend to think of the three individual subjects as a list that would require "are." Example: John and Stacy and the church group are driving to the mountains. You would not use "John and Stacy and the youth group is driving to the mountains" Right?
