Use of "either".

Hi all,

I would like to know how the word "either" is used, specially if its use is mandatory in some cases.

For example: is this sentence gramatically correct?

*You need to choose either the red one or the blue one.*

And, can I just "forgot" the "either" word?:

*You need to choose the red one or the blue one.*

Has the meaning somehow changed? Where shall I use "either"?
