Use of dashes?

Hi. Would you use dashes as I have done in the speech below or is a comma or dot better?

He knows it's important to you - he understands that - but still you can't expect him to understand that it's more important than him.

I would probably write it this way.

He knows it's important to you. He understands that. But still you can't expect him to understand that it's more important than him.
