Use of at/in/on are confusing

1. "I will do the remaining task at the noon." but "I will do the remaining task in the evening." both are correct, right?
When should I use "at" & "in" in such cases? because it's really confusing to know the exact preposition.

2. "I have sound expertise in that technology." or "I have sound expertise on that technology." Which one is correct and why?

There is no way for us to know why certain prepositions are used. You could just as well ask yourself why people don't say something that everybody considers incorrect in your native language. Sometimes there are alternatives. You can say at night and in the night even though a night lasts a

I was first deeming ennon's below reply as a reasonable answer.
enoon"at" is a point in time, and so is noon. "In the" requires an area to be in, and the evening lasts a while.
But you are right and significantly integrated my thought process.
