USE OF APOSTROPHE

I am writing a new menu for my restaurant and have issue with the lack of use of apostrophe in the word

today's , todays when describing: Today's Fresh Fish Selection.

Am I correct that an apostrophe is needed?

Also on my menu is Stir Frys instead of Stir Fries or Stir Fry's as the header for that group of entrees.
