use of adjectives before a gerund

Hi,

I want to ask you this:

Can I use some descriptive adjectives before a gerund just like a noun that didn't come from a verb?

eating food is my favorite activity. -- Here, 'eating food' seems to be a gerund phrase, but to put any adjective in front of the phrase wouldn't be correct, I think.

Bur we take the object of the gerund 'eating', which is the word 'food', out and put some descriptive adjectives in front of it, then it seems to fine.

Moe's late-night eating isn't helping him sleep soundly at night.

To me, you can also add a restrictive phrase after the gerund and it wouldn't make any real difference:

Moe's late-night eating of cookies isn't helping him sleep soundly at night.

Does what I have said so far sounds good to you? Anything to add?
